Re-gripping my 5 wood caused it to perform worse.

In the past I was able to use my Regal 5 wood off the tee and fairway and can remember fondly a par on a par 5 I made by hitting 3 straight 5 woods and 2 putts a couple years ago. Late last year I had it regripped with Golf Pride grip and since then, I feel that the grip feels 'not right' at the top of my backswing which would then translate into a bad hook. The grip itself is not perfectly round but has a slight ridge in the centre. I can use my Regal 3 wood fine off the tee and sometimes use it off the fairway with less consistent results. My preference off the fairway would be my 5 wood but I struggle with it nowadays.
Would a grip with a slight ridge in the centre cause hook problems?

The ridge in the grip would not necessarily cause hooks, apart from actual swing technique hooks can be caused by grips that are too thin for the size of your hands. Perhaps the simplest thing to do would be to regrip the 5 wood so it is the same as your 3 wood, it is preferable to have the same grips throughout your set.
